Ripe peach and apricot aromas very good with a noble fish like turbot is our Domaine de Vedilhan Serica Viognier – an extremely smart white from the Languedoc. Named “Serica”, Latin for “silk” because it slips down that way. Or Chablis, Corinne Perchaud, elegant and intense, with pin-sharp citrus flavours. A classic match for a classic fish.
